Talk Like a Pirate and Win Pirate Booty! #Sponsored Review and #Giveaway

Arrrg... In honor of Talk Like a Pirate Day, Acting Balanced has teamed up with Pirate's Booty to send one lucky AB reader in the US a case of yummy, scrummy GLUTEN FREE Aged Cheddar Pirate's Booty!

Robyn was one of the lucky taste testers in our family and she's been enjoying the fun and fabulous puffs that she compares with those day-glo cheese puffs... only way healthier and with a great crunch!  It's made with Rice and Corn, and as a mom, I appreciate that it's all natural and trans-fat free, although all the kids care is that it tastes good.  Both boys gobbled up their portions too!  For those with other allergies, Pirate's Booty is also peanut and tree nut free so it makes a perfect snack to send in as a treat for those in nut-free schools!

I was personally impressed with both the taste and texture - since I don't actually like the day-glo cheese puffs, it was great to find something that tasted great and I didn't feel too guilty snacking on!  I also appreciate that it's fairly low fat and doesn't have the sodium that chips or other savory snacks often do!

Want to try it out with your family?  Check out the Pirate's Booty website, visit Pirate's Booty on Facebook or follow Pirate's Booty on Twitter and then enter to win your very own case!

MMMmonday - Pizza, Pizza and More Pizza, a round-up of favorites!

One of our go-to meals that everyone loves is pizza and with back to school coming up for us this week, I thought it would be a good time to go around the blogosphere and check out some great and different Pizza recipes!

Let's start with some dough ... cause it's tough to make pizza without a crust:

MmmmMonday: Scrambled Egg "Muffins" with a Greek twist

A friend of mine made this for a playdate a few months back and I meant to start making it then, but with the holidays, this recipe got put on the back burner... then I was reading Comeback Mama's blog and she was featuring her Healthy Egg Muffin recipe, which was so similar to A's... and I knew that I had to make a pan for my family to try...

I decided to change up the ingredient list to suit our family's needs, so mine looked like this:

12 eggs
1/4 cup feta cheese, crumbled
1/4 cup diced peppers
1/4 cup diced mushrooms
1/4 cup diced ham
1 tsp black pepper

Directions:

1. Preheat oven to 350F

2. Break all 12 eggs into a large mixing bowl and whisk until yolks are broken

3. Dump remaining ingredients into eggs and stir until combined.

4. Ladle egg mixture into greased or lined muffin pan (I used a 1/4 cup measuring cup) so that pan is 2/3 full

5. Bake for 18-20 minutes or until egg has set completely

I also made a second batch with diced tomatoes, feta, peppers and mushrooms... also yummy!  They keep really well in the fridge, and I also tried freezing and microwaving for 45 seconds - that works too!  Robyn eats hers right out of the fridge, cold...

This week I'm going to try these combinations:

Ham & Swiss
Florentine - Spinach & Mozzarella
4 Cheese - swiss, mozzarella, cheddar and feta

What would you add to your Scrambled egg muffins?

MMMmonday - Sesame Thai Turkey Salad

Are you looking for a light alternative to mayo-rich chicken salads?  Look no further than this yummy recipe that I got from a friend.  This recipe is also a good way to make leftover chicken or pork disappear.

25 Days of Cookies Day 1 - Chewy Chocolate Cookies (w/GF option)

I reviewed Special Diets for Special Kids a while back and there are some fabulous cookie recipes in it, so I thought I'd share this one that definitely works as a Gluten Free recipe, but you can also use any flour in it, so it's also great for households who don't have to worry about gluten.

These are delicious cookies — rich and chewy. The original recipe called for only 2 tablespoons flour, and they work just as well with GF flour. They are very sweet so make them for special occasions only.

25 Days of Cookies Day 4 - Choco-Walnut Brownie Cookies #GFCF #GLUTENFREE

I've posted this recipe on Acting Balanced before - one of the best things about these yummy cookies is that they're gluten free - so I can bake them for Liam, but they are still absolutely scrumptious and worth adding to your holiday cookie plate!

MMMmonday - Twice Wild Turkey Dressing from Special Diets for Special Needs Kids (Review)

I love finding new recipes that are great for the whole family, but are GFCF for Liam and this is one of those truly yummy recipes that may just become a holiday classic in our house.  It's from Special Diets for Special Kids, Volumes 1 and 2 Combined: Over 200 REVISED and NEW gluten-free casein-free recipes, plus research on the positive ... ADHD, allergies, celiac disease, and more!, which I will tell you more about after the recipe.

Product Review - Happy Belly Bags - #GLUTENFREE #CASEINFREE

As a mom who publicly and proudly proclaims my son's Gluten Free status, I often get asked how to get started on going gluten free with a preschooler and now I can direct new parents to a fabulous source!  Happy Belly Bags sent me one of their Gluten-Free, Casein-Free bags to test and I have to say that it would be an absolute gem for parents just starting out on the GF lifestyle!
Filled with kid friendly snacks, meal ideas and more there is a good selection of products to help you wade through the sea of change and come out with a better understanding of what you can actually find that's gluten free!

MMMmonday - Mushroom Stew

Even though it's still pretty darn warm here in Charleston, I've been craving comfort food and for me - that's stew, so I made up a big pot of this yummy vegetarian stew and pretended it was chilly outside...

Mushroom Stew

1/2 oz (14 g) dried porcini mushrooms
1 cup (250 ml) hot water
4 Tbs (60 ml) butter or olive oil
1 onion, finely chopped
2-4 cloves garlic, finely chopped
2-3 lbs (900-1350 g) assorted fresh mushrooms such as crimini, portobello, oyster, shiitake, or white button, trimmed and coarsely chopped
1 tsp (5 ml) chopped fresh sage
1 tsp (5 ml) chopped fresh rosemary
1 tsp (5 ml) chopped fresh thyme
1/4 cup (60 ml) dry sherry, Marsala, or Madeira (optional) and I usually omit
1 can (14 1/2 oz, 411 g) chopped tomatoes, drained
1 tsp (5 ml) balsamic vinegar
Salt and freshly ground pepper to taste
Chopped fresh parsley for garnish

Soak the dried mushrooms in the hot water until tender, 20 to 30 minutes.

Drain and strain the liquid through a paper towel or coffee filter and set aside.
Chop the mushrooms and set aside.
Heat the butter in a heavy pot over moderate heat and saute the onion and garlic until tender but not brown, about 5 minutes.
Add the mushrooms and saute until most of the liquid they release has evaporated, about 10 minutes.
Add the remaining ingredients and the reserved soaking liquid and bring to a boil. Reduce the heat and simmer uncovered for 10 minutes.
Garnish with chopped parsley. Serves 4 to 6.

MMMmonday- Baking with Sorghum Review and Recipes

I have had the opportunity to check out a new-to-me kind of flour over the past few weeks.  We've been struggling with whether to keep Liam on a GF diet or to re-introduce gluten, and I think we've decided to stay GF for now.  That means I am again looking for new recipes for new GF foods, desserts that our whole family can enjoy!

I was sent a sample of sorghum flour and made these two recipes:

Gluten Free?

Liam has been on a gluten free diet for almost two years and when we started we saw good results... well he fell off the wagon this week and ate a full range of gluten free foods at a party, so I've watched him for the past several days and I haven't seen evidence of the stimming and behavior issues that decreased when he went GF...

MMMmonday - Carrot-Ginger Salad

I was browsing for a salad with some new flavor combinations and some summer flair and I found it through allyou.com on the myrecipe.com website.  I made a few modifications - no almonds for Wayne, and I was out of rice vinegar so I substituted apple cider vinegar, but I will definitely be making this again!

MMMmonday - Fresh Fruit in Honey Sauce

I love this time of the year, when I can get great fresh local fruit, so I like to take advantage of it and make simple  but yummy desserts, sides and main dishes!  I haven't done a MMMmonday theme month in a while, so I think I'm going to do a month of cooking and baking with fruit!

An Interview with Danna Korn about Gluten Free Living

I am pleased to have been able to chat briefly with Danna Korn, author of Living Gluten-Free for Dummies and spokesperson for Glutenfreely.com.  Whether you have Celiac disease, are on a GF diet for Autims or are just allergic to wheat or know someone who is, you should check out this clip from our interview:

MMMmonday - Nutty Oatmeal Blender Waffles

One of the groups that helps keep this never-stay-at-home mom sane is my MOMS Club.  I've been a member since Liam was about 6 weeks old and I have a great group of friends that I know I can rely on!  Recently, the group has started a spin-off recipe group and we regularly issue challenges to each other - this week's challenge is one that is near and dear to my heart, with a twist... one of the MOMS in the group lives in a dairy free/egg free home because her son is highly allergic!

Her challenge this week was to find Vegan recipes to share... and I thought I'd also share it with you!

MMMmonday - Gluten Free Chocolate Nut Brownie Cookies

My friend Heather from Out of the Box Into the Kitchen found this recipe on  and I've found another fabulous blog - this one is gluten and dairy free because of the blogger's allergies, so I thought I'd showcase both Out of the Box Into the Kitchen and Everything Reconsidered and share this yummy and easy GF/Dairy free recipe today...

Unlike the Chai bread recipe from a few weeks ago that required unusual ingredients, this one is simple and easy for those who aren't specifically looking for gf.  Visit either site for pics, cause you know I'm horrible at taking pictures of my baking...

chocolate walnut brownie cookies

  • 3 c confectioners sugar
  • 3/4 c cocoa powder
  • 1/2 tsp kosher salt
  • 1.5 c semi sweet choco chips roughly chopped
  • 1.5 c walnuts or pecans roughly chopped (i've tried both - walnuts will save you some $$$)
  • 4 large egg whites room temperature
whisk together confectioners sugar, cocoa powder & kosher salt. stir in choco chips & nuts. add egg whites and stir until just combined - do not over mix. drop 1/4c heaps onto a parchment lined baking sheet. bake in center oven 20-25 minutes at 325, rotating 1/2 way thru. remove cookie sheet from oven and place on cooling rack - cool completely before removing cookies from parchment. this recipe makes around 12 large cookies.

Here is the recipe link up for March - feel free to add your favorites and come back every MMMmonday to add something new and check for great recipes!

MMMmonday - Gluten Free Carrot Chai Bread and linky

I love the way the Gluten Free Goddess creates exquisite food... and Liam appreciates her efforts too...

This one is especially yummy!

Preheat the oven to 350 degrees F. Line a 9-inch ceramic loaf pan with a piece of parchment paper that extends up over the top of the two long sides (this makes it easy to grip and lift the loaf out of the pan).

Mix together the dry ingredients in a large mixing bowl:

1/2 cup Bob's Red Mill brown rice flour
1/2 cup Bob's Red Mill sorghum flour
1/2 cup tapioca starch
1/4 cup Bob's Red Mill coconut flour
1/4 cup millet flour
1/2 cup organic cane sugar
1/2 cup organic light brown sugar
1 tablespoon arrowroot starch
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
3/4 teaspoon xanthan gum
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/8 teaspoon ground cloves

Add in and beat:

1/4 cup organic free-range egg whites or Ener-G Egg Replacer for 2 eggs (1/4 cup liquid, mixed)
1/2 cup light olive oil or organic Canola oil
1/2 cup So Delicious Coconut Milk (more as needed, up to 3/4 cup)

As you beat the liquid ingredients into the dry mix, keep an eye on the batter. It should be smooth and slightly thick, close to a muffin batter. If it is too stiff or dry, add in more coconut milk as needed, a spoonful at a time to achieve a creamy-thick batter. I ended up using 3/4 cup total coconut milk, but you may need less liquid if you live in a more humid climate.

Add in:

1 cup finely grated carrots (I use a box grater)
1/2 cup raisins
1/2 cup chopped pecans or walnuts (may omit)

Mix the batter to distribute the carrots, raisins and nuts. Scoop the batter into the parchment lined ceramic bread loaf pan and smooth out the top with a silicone spatula.

Bake in the center of a pre-heated oven for one hour. (If you use a thinner metallic pan, you may have to adjust baking time as it may cook faster- especially around the edges.) The loaf should feel firm to the touch, and a wooden pick inserted into the center of the loaf should emerge clean.

Remove the pan from the oven and set it on a wire rack to cool. When the loaf has settled and is cool enough to handle, use a thin knife to loosen the two ends from the pan, and carefully lift it out of the pan using the parchment paper on either side of the loaf. Note- the loaf is fragile while warm, so don't try to slice it right away.

When cool, slice the carrot bread with a sharp bread knife. Serve with your favorite vegan buttery spread, or whipped cream cheese.

Serves 8 to 10.

Don't forget to link up your recipes to share:

MMMmonday - Detox Green Vegetable Soup from GF Goddess and a linky!

Who says that good for you can't taste fabulous?  I was looking for a yummy, easy soup recipe for those cold winter days - I know I live in SC, but it's been unusually cold here and it makes me think of home and yummy soup in a cup!

I found the perfect 'sipping soup' at The Gluten Free Goddess and had to share - plus click through to see a fabulous picture of what the soup will be!

This easy detox soup can be thin or thick, depending upon the amount of water you add. I love that it cooks up quickly and comes together beautifully - this is one of those taste with a spoon soups that you can putter around with to get just right!  The Gluten Free Goddess makes it dairy free, gluten free and completely VEGAN, and just chock full of anti-oxidants and vitamins!  My only changes to the original recipe was to use roasted garlic, since I had some...

You'll need:

1 tablespoon olive oil
2 cloves of garlic, chopped
2 tablespoons diced onion
1 inch of fresh ginger, peeled and chopped
4 cups fresh broccoli, cut up
1/2 pound of fresh spinach leaves
3 parsnips, peeled, cored, chopped
2 ribs of celery, trimmed, chopped
A handful of fresh parsley, roughly chopped
Fresh water, as needed
Sea salt and ground pepper, to tatse
Lemon or lime juice

Using a large soup pot, heat the olive oil over medium heat and stir in the garlic, onion, and ginger to season the oil. Add the broccoli, spinach, parsnips, celery and parsley, and stir a bit until the spinach wilts and collapses. Add just enough water to cover the vegetables. Remember the spinach will cook down quite a bit, so don't add too much water at first. You can always thin the soup later, if you need to.

Bring to a high simmer, cover the pot, and reduce the heat to a medium simmer. Cook for fifteen minutes or so until the veggies are softened.

Use an immersion blender, or other blender or food processor to puree the soup.

Taste test. Does it need brightening? Add a squeeze of citrus.

Options:

To make this a creamy soup add a dash of So Delicious Coconut Milk.

Serve with a spoonful of hot cooked rice in the center of the bowl.

Mix it up a little and add some curry paste or Tabasco sauce for something with a little more bite!

Review and Giveaway - Katz Gluten Free Bakery

When we made the decision to go gluten free with Liam, I thought that the hardest part would be finding a bread he'd eat... and that was partly true (although we've found one now), but really, the harder part has been getting variety and 'fun foods' back into his diet - because really, no preschooler should have the same treat over and over again at every special event... so I was so pleased when I was invited to review Katz Gluten Free products with him!

What I love about Katz Gluten Free bakery is that they don't just stop at the basics - they actually create treats and products that even us gluten eating people want to steal...  and this season the two new additions are vanilla flavoring for their famous Rugelach and Frosted Chocolate Cupcakes with GF sprinkles!

OMG - I know why their rugelach is famous... the vanilla flavor is to die for!  Liam wasn't too sure about them - they looked different than anything he'd eaten before, but once he tried them he was asking for more.  And as for me - it's a good thing I only pulled out the two for review and left the rest in the freezer.. the whole package could have been gone in one sitting!

Liam was also able to take a real cupcake with frosting,  rather than a cookie or carrot muffin to his party- it was great seeing him eat a chocolate cupcake again... I can't tell you what I think of them personally because I'm allergic to chocolate, but Liam sure seemed to inhale his!

Liam is also in heaven because of the yummy cookies we had to try - chocolate chip is his fave, but a close second are the colored sprinkle cookies we got to try.  He also loved the cinnamon strip and gf challah rolls we got to try.

I had one of the sprinkle cookies too, and if I didn't know better, I'd swear there was wheat flour in them - they were that good.. not gritty or flavorless like some of the GF cookies I tried.

I was also pleased with how the product was shipped - it was baked fresh and then overnighted to us with instructions to freeze it!

MMMmonday - Simple Treats Cookbook Review, a Recipe and Linky!

As many of you know, Liam is on a gluten-free diet for his autism, and we've seen good results and a correlation between removing the gluten and a decrease in his stimming behaviours, so we continue with the discipline... the hardest thing to keep a child away from is sweets, so when I found out about a cookbook called Simple Treats: A Wheat-Free, Dairy-Free Guide to Scrumptious Baked Goods by Ellen Abraham, I was truly excited!

Simple Treats: A Wheat-Free, Dairy-Free Guide to Scrumptious Baked GoodsAs I waited for the book to arrive, I wondered how the author would balance the flours and replace the gluten to get the 'scrumptious' baked goods.  I found out quickly when I scanned the book - in this case wheat-free doesn't mean gluten free... Ms. Abraham has found out that the secret to baking without wheat is to find another grain with gluten in it... in this case, barley.

Barley is a wonderful old grain, which is invaluable to people who are allergic to wheat, but not gluten-free...

Still, the idea of baking wheat and dairy-free gave me hope to tweak the recipes to make them gluten free... so I set out to experiment...

So far, I've had good experience with building on a few of her recipes and Liam has been a super willing guinea pig ;) The book is divided into sections - Muffins and Breads, Cookies, Cakes and Cremes, Frostings and Glazes.  If you are looking for fabulous vegan alternatives to baking, you will definitely be happy with this book - as will anyone who has a straight 'wheat' allergy.  The recipes are also simple to tweak if you are looking to bump the recipe into the gluten free zone - with the addition of either a mixed purpose gf flour or a blend of rice flour and tapioca with xantham gum.

One of the best recipes that I've found is the Baked Apple-Cranberry Crisp because it combines all of the yummy-ness of Fall with the fruit that I battle to keep in his diet, so the recipe from the book is in black with my changes in blue:

Baked Apple-Cranberry Crisp
This simple dessert is warming and delicious- and an amazing way to use up fruit that might be a little past its prime.  Everyone always thinks you've worked so hard on this dessert when you present them with this scrumptious bubbling confection.
Topping:
1/4 cup barley flour  (I used the King Arthur Gluten Free multi purpose flour)
1/2 cup maple sugar, Sucanant or date sugar (I used light brown sugar)
2 tablespoons ground cinnamon
1/4 teaspoon salt
1/4 cup walnuts
3/4 cup rolled oats
3 tablespoons canola, safflower or sunflower oil

Filling;
4 cups sliced, peeled apples (about 5 apples)
1 cup fresh cranberries
2 tablespoons lemon juice
1/4 cup maple sugar, Sucanat or date sugar
1 tablespoon ground cinnamon
Dash each of grated nutmeg, ground allspice and salt
Dash of cayenne pepper (optional)
2 tablespoons arrowroot

  1. Preheat the oven to 400F.  Oil a t2 quart baking dish or casserole and set aside.
  2. To make the topping, sift the flour, sugar, cinnamon and salt into a small bowl; add walnuts and oats.  Mix with a knife or a fork to combine the ingredients well.  Drizzle in the oil while stirring with a knife; stir until all of the oil is mixed in and the mixture resembles coarse crumbs.
  3. To make the filling, combine the apples, cranberries, juice, sugar, spices and arrowroot and toss until everything is well coated.  Spread the apple  mixture in the prepared dish and cover with the topping.
  4. Bake for 10 minutes, then reduce the heat to 350F.  Bake 25 minutes more, until the topping is browned, the filling is bubbly and the apples are soft.
* For a change of taste, try substituting raisins for the cranberries and/or pears for the apples.

I would totally recommend picking up Simple Treats: A Wheat-Free, Dairy-Free Guide to Scrumptious Baked Goods if you are looking to bake yummy vegan desserts!

Now for the linky - please share your favorite recipes here:  This is a monthly linky so please keep adding  yummy new treats and feel free to click on the ones that interest you most!
