MMMmonday - Pea Soup

I didn't realize that one of my favorite soups isn't widely known in the US - I've been eating pea soup since I was a little girl and the recipe I use comes from a French Canadian tradition - and it's incredibly yummy on a cold day... it may seem like a lot of work, but it really isn't...

French Canadian Pea Soup



1 pound yellow peas
1/2 pound salt pork or ham bone
2 3/4 quarts water
3 onions
2 carrots, diced into small cubes
2 to 3 bay leaves
1 teaspoon savory
Salt and pepper to taste
  1. Soak peas overnight and drain. 
  2. Put all ingredients into the pot. Bring to a boil for 2 minutes. Remove and let stand 1 hour. 
  3. Put back onto the heat and bring to a boil. Lower heat, cover, and simmer 1 hour or more until peas are tender. Remove bay leaves and bone (if used).  Add salt and pepper to taste.  Let stand for 1 hour.
  4. Puree 1/2 of the soup until smooth and return to the pot
  5. Reheat before serving.
