25 Days of Cookies Day 6 - Candy Cane Cookies

These cookies can be a ton of fun and a great way to get the kids involved in baking by letting them help roll out the dough!


Candy Cane Cookies



1 cup butter or margarine
1 cup sifted confectioners sugar
1 egg
3/4 teaspoon peppermint flavoring
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
1 teaspoon salt
6 - 10 drops red food coloring
1/2 cup crushed peppermint candy
1/2 cup white sugar


Mix butter sugar, egg, and flavorings thoroughly. Add flour and salt, Mix well. Shape dough into a disk and wrap with plastic wrap; chill for at least 2 hours or until easy to handle.


Divide dough in half and color one half with red food coloring.
Roll each color into strips, place side by side, press together lightly and twist like a rope (about 1/4 inch thick total) Cut into 6 inch lengths and curve the top to resemble a candy cane.
Bake for 8-10 minutes


While still warm, remove from pan and sprinkle with candy and sugar mixture.


Alternative idea (Snow covered Candy Cane Cookies):
You can also roll out 6 inch lengths and leave them straight. Melt 1/4 cup white chocolate chips over a double boiler and dip 1/2 of the cookie in the chocolate and then roll in the crushed candy!
