25 Days of Cookies Day 15 - Crushed Peppermint Snowballs

One of things I hate to do is waste, so when the kids bring home their Christmas gifts from the little parties and they've got broken candy canes attached, I often bake with them.  I love finding quick and easy recipes so I thought I'd share another recipe from the Ultimate Cake Mix Cookie Book that I reviewed here


These cookies are good all winter long - and if you don't have enough broken candy canes, the perfect time to stock up on them is at the after Christmas sales!


Crushes Peppermint Snowballs



1 (18.25-ounce) package white cake mix
1/3 cup vegetable shortening
1/3 cup butter
1 large egg
1/2 cup crushed peppermint candy canes or red and white striped candies
1 1/2 cups confectioners' sugar

  1. Preheat oven to 375F
  2. Place the cake mix, shortening, butter, and egg in a large bowl. Beat with an electric mixer on medium speed 1 to 2 minutes until blended.  Mix in the crushed peppermint with a wooden spoon.
  3. Shape the dough into 1 inch balls and place 2 inches apart on an ungreased cookie sheet
  4. Bake 9 to 12 minutes or until light brown around the edges.  Cool one minute on sheets, then remove with spatula.  Place the confectioners's sugar in a small bowl and roll warm cookies in the sugar to coat.  Place cookies on wire racks to cool completely.

Makes about 4 dozen cookies
