MMMmonday - Sesame Thai Turkey Salad

Are you looking for a light alternative to mayo-rich chicken salads?  Look no further than this yummy recipe that I got from a friend.  This recipe is also a good way to make leftover chicken or pork disappear.

Sesame Thai Turkey Salad (Serves 4 to 6)



Salad
4 to 5 cups bite-size pieces cooked turkey
1/2 pound carrots (peeled and shredded)
1/2 pound red or green bell pepper (cored, seeded and thinly sliced)
1/2 cup thinly sliced scallions
1/4 cup roasted salted peanuts
1/4 cup thinly sliced dried apricots
Napa cabbage leaves (rinsed and dried)
Peeled orange slices (optional, for serving)

Dressing
1/4 cup rice vinegar
2 tablespoons tamari (or you can use soy sauce)
2 tablespoons toasted sesame oil
1 tablespoon honey
2 teaspoons grated orange peel
2 teaspoons crushed red pepper

Combine the turkey, carrots, bell pepper, scallions, peanuts and apricots in a large bowl.
Thoroughly combine all of the dressing ingredients in an electric blender, pour the dressing over the salad, and then toss all of the ingredients to thoroughly coat and combine them.
Arrange cabbage leaves on 4 to 6 salad plates, and then equally spoon the salad onto the cabbage leaves.
Serve topped with orange slices.
