They're great year round, but we usually made them most often when it was too warm to put the oven on, or when mom needed it for something else... I personally liked them still warm and gooey. Being allergic to chocolate, so I don't eat them often anymore, but every once in a while I sneak one...
Chocolate Macaroons
Melt 1/2 cup of butter in a saucepan
Add 2 cups of sugar and 1/2 cup milk
Bring to a rolling boil. remove from heat.
Add 3 cups of rolled oats, 1 cup of coconut
and about 5 tablespoons of Quik (or other cocoa powder).
Mix and drop by teaspoonful onto wax paper.
Enjoy!
Can be stored for up to a week in an air-tight container or frozen for up to 3 months
