25 Days of Cookies Day 21 - Chow Mein Chews

These are truly simple cookies that require no baking at all and they get rave reviews!  You can even melt the chips in the microwave!

Chow Mein Chews

2 cups semisweet chocolate chips
2 cups butterscotch chips
12 ounces peanuts
5 (5 ounce) cans chow mein noodles

  1. Melt the chips in a double boiler on low heat (or in the microwave*)
  2. Stir in the nuts and the noodles.
  3. Drop by teaspoonfuls onto waxed paper-lined cookie sheet.
  4. Cool and then store covered in the refrigerator.
*To melt the chips in the microwave, use a microwave safe bowl and heat on 40% power for 1 minute.  Stir and if the chips are still lumpy, return them to the microwave for 15 seconds and repeat until the chips are smooth.  Don't use high heat because you will scorch the chips and ruin them!
