25 Days of Cookies Day 18 - Apple Chai Oatmeal Cookies

I found this recipe a while back on the Oregon Chai website and fell in love!  They have what I consider to be all of the yummiest holiday flavors - Apple, Oatmeal and Spice!  For me, I omit the chocolate chips and the nuts so Wayne and I can both eat them... for the holidays I add dried cranberries in place of the raisins.

Apple Chai Oatmeal Cookies

1 3/4 cup Quick oats
1 1/2 cup Flour
1 tsp. Baking powder
1/2 tsp. Salt
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1 cup Packed brown sugar
1/2 cup White sugar
1/2 cup Butter, softened
1 Egg
1 cup Applesauce
1/4 cup Chai Latte Concentrate
1 cup Chocolate chips
1 cup Raisins
1 cup Walnuts

Directions:
  1. Pre-heat your oven to 350F (190C)
  2. Pour raisins into small bowl and cover with Oregon Chai Original concentrate, set aside. 
  3. Combine oats, flour, baking powder, salt, cinnamon and nutmeg and set aside. 
  4. In a separate mixing bowl, combine sugars, add butter and beat until creamy. Add egg and applesauce and blend until smooth. 
  5. Add flour-oat mix and blend. Add chocolate chips, raisins and walnuts. Drop by rounded teaspoonfuls onto greased cookie sheet. 
  6. Bake at 350, 10-12 minutes Yield 3 dozen
