A Classic Family recipe with Coca Cola! #FamilyClassics

My husband is a Coke afficianado - his favorite thing that we did on our last family vacation to Atlanta, Georgia was to stop at the Coke Museum!  He's such a fan that he has t-shirts showing off Coke in six different languages!  He has Russian, Thai, Chinese, English, and a few more that I don't even recognize.  He also has t-shirts from various eras.  When we go home to Canada, instead of bringing back cases of Canadian beer, he brings back cases of Canadian Coke, because it tastes different than US Coke.  With such a Coke fan in the house, it's no wonder that we have a family favorite recipe that includes Coca Cola!

I love this recipe because it's so simple and so tasty - it's even good for leftovers.  I've got a big slow cooker and when I can find pork butt on sale, I'll make a huge double batch and freeze half for later!  I've also used the meat in place of beef for tacos (adding taco mix seasoning), and also made fabulous lettuce roll-ups with it!  If you don't eat pork, you can easily do a slow cooked beef brisket in the same sauce!

Slow Cooked Pulled Pork Sandwiches

3 lbs Boneless Pork Butt Roast (or about 5 lbs bone in, just cook a little longer)
1 medium onion, chopped
1 can Coca Cola
1 cup BBQ sauce
2 cloves garlic, chopped
2 tsp black pepper
1 tbsp corn starch
8 large Kaiser rolls

Put the butt roast and onions into the slow cooker.  In a small bowl mix the Coke, BBQ Sauce, garlic and pepper and pour it over the pork and onions.  Cook on high for 4 hours (5 with bone) or low for 7 hours (8 with bone).  Take meat out and pull with two forks, removing bone if necessary.  Mix the cornstarch into the liquid and let it cook for a few minutes until it thickens into gravy.  Mix it with the pork and serve on Kaiser rolls with cole slaw and potato salad.

On a side note, neither my husband nor I drink coffee - I'm primarily a tea granny, but Wayne gets his caffeine directly from his Coca Cola - I credit Coke for getting him through three university degrees - his undergraduate, Masters and PhD would not have been possible if he didn't have Coke to wake him up.  No wonder he proudly wears their paraphernalia!

Do you cook with Coke?  Do you have a story to share?
