Canada Day recipe... Butter Tarts

This is my grandmother's recipe... and a yummy one at that...  it makes wonderfully gooey tarts that just melt in your mouth...

12 pre-baked tart shells (2 inch diameter)
1 egg
1 egg sized piece of butter at room temperature (I always figure just over 1/2 a stick in the US)
1 cup brown sugar
1 tsp vanilla
1 cup golden raisins 

Pre-heat oven to 350F 
Mix eggs, butter, brown sugar and vanilla together in a bowl.
Cover the bottom of each tart shell with raisins then spoon the butter mixture over it to 2/3 full
Bake tarts for 7-10 minutes or until sugar begins to crystalize
Remove from oven and let settle for 1 hour or more...

Options: you can use walnuts or pecans in place of the raisins for a crunchier texture
You can also bake this as an 8 inch pie instead and increase the baking time to 15-18 minutes
