This is one of those truly versatile and yummy recipes that work well in so many situations! I got hooked on it this past holiday season and I think I"m going to be making it often!

*If you would like to make a spread rather than a dip with this quick and easy recipe, just substitute cream cheese for the sour cream.

MMMmonday - Lettuce Wraps More Back to School Brown Bag Lunch Ideas
One of the things that seems to start happening when you are more than a month into the school year is you start falling into a rut with your brown bag lunches. I try to change things up, but there are only so many ways to make a sandwich different... and this is definitely one of the ways - make it a lettuce wrap!
I try to find good broad leafed lettuce and I'll cut any large veins off as best I can so that they wrap well... but here are a couple of fillings that make my mouth water (and if your kids don't like lettuce, you can always make these in flatbread or tortilla:
Greek Chicken Lettuce Wraps (makes 3 large or 4 small wraps)
3-4 Lettuce leaves
1 chicken breast, cooked and cubed or shredded
4 tbsp. feta cheese
3 tbsp sliced olives
3 tbsp diced tomato
2 tbsp Greek salad dressing
1/2 tsp oregano
salt and pepper to taste
additional shredded lettuce, carrots or spinach to taste
Mix chicken, cheese, olives, tomatoes, dressing, oregano, salt and pepper together in a medium bowl. Divide evenly between lettuce leaves and top with additional shredded vegetables if you want. Wrap lettuce leaf tightly around the filling and place wrap on cling film. Wrap and refrigerate until you pack your lunch. Ensure that the lettuce wrap stays cool by placing it next to an ice pack or frozen drink box.
Tuna Wraps with 4 cheese (makes 3 large or 4 small wraps)
Lettuce leaves for wrapping
1 can tuna packed in water
2 tbsp softened cream cheese
1 tbsp mayonnaise or salad dressing
1 tbsp shredded Parmesan cheese
2 tbsp shredded cheddar cheese
2 tbsp shredded mozzarella cheese
1 stalk celery, finely diced
1 small carrot, shredded or finely diced
1 spring onion, diced
salt and pepper to taste.
Drain the tuna and place it in a medium mixing bowl. Add softened cream cheese and mayonnaise. Mix thoroughly. If it still seams dry, add a little more mayo. Mix in the cheeses, celery, carrots, onion, salt and pepper. Divide the tuna mixture between the wraps. Wrap lettuce leaf tightly around the filling and place wrap on cling film. Wrap and refrigerate until you pack your lunch. Ensure that the lettuce wrap stays cool by placing it next to an ice pack or frozen drink box.

MMMmonday - Back to School Lunch ideas
I was having a conversation with one of my MOMS Club friends about mixing up the ideas for school lunches and I thought I'd share a couple of our favorite recipes and ask you to also share your back to school recipe ideas!
One of the things that I love to do is to make wraps - they seem to travel better than traditional sandwiches and they're so versatile!
Veggie and Hummus Roll-up (per sandwich)
1 6 inch flour tortilla or flatbread
1 tbsp hummus
1small handful baby spinach or your favorite lettuce
1/4 tomato, chopped (or sun-dried tomatoes if you prefer)
a few pieces of julianned carrots
Spread the hummus over the tortilla. Add the veggies and roll!

Cantaloupe and Turkey Roll-up (per sandwich)
1 6 inch flour tortilla or flatbread
1 tbsp horseradish mayo (can substitute creamy ceasar dressing or just plain mayo, sour cream etc)
1 wedge of skinned and seeded cantaloupe
1small handful baby spinach or your favorite lettuce
1 or 2 slices of roasted turkey deli meat, or chopped leftover turkey
Spread mayo over tortilla, add lettuce then turkey and finally top with wedge of cantaloupe. Roll and enjoy!

Peanut Butter and Banana Wheels (makes enough for 2 kids lunches)
My mother calls these ones bereavement sandwiches because she's always asked to contribute them when we have pot-luck somber occasions, but if you can take peanut butter to school, this is a yummy way to do it.
1 rectangular style flatbread
2-3 tbsp peanut butter (I like my peanut butter thick!)
1 medium banana
Spread the peanut butter onto the flatbread, place the banana at one end and roll. Cut roll into 1cm slices and yum!

MMMmonday - Mango & Goat Cheese Sandwiches
This may sound a little strange, but I have to tell you that this is absolutely yummy - I use a good chevre cheese, but any goat cheese will work... This sandwich is great as an appetizer, cut into small pieces to be served with cocktails, or as a nutritional and unusual
breakfast treat. Fresh peaches may also be used instead of mango.
