25 Days of Cookies Day 7 - Chocolate Macaroons

Not necessarily a Christmas cookie in the traditional sense - these are fabulous no-bake cookies that can be whipped up and shared quickly!  These are one of my Dad's favorites.

They're great year round, but we usually made them most often when it was too warm to put the oven on, or when mom needed it for something else...  I personally liked them still warm and gooey.  Being allergic to chocolate, so I don't eat them often anymore, but every once in a while I sneak one...
Chocolate Macaroons



Melt 1/2 cup of butter in a saucepan
Add 2 cups of sugar and 1/2 cup milk
Bring to a rolling boil. remove from heat.


Add 3 cups of rolled oats, 1 cup of coconut
and about 5 tablespoons of Quik (or other cocoa powder).


Mix and drop by teaspoonful onto wax paper.


Enjoy!
Can be stored for up to a week in an air-tight container or frozen for up to 3 months
