There is something comforting about Oatmeal Raisin cookies, don't you think... and my 25 days of cookies wouldn't be complete without one or two Oatmeal Cookie recipes, so here's one of my faves...
ICED OATMEAL RAISIN COOKIES
14 Tablespoons butter, softened (7 ounces)
3/4 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups oatmeal (either quick or old-fashioned, uncooked)
1 cup raisins
Heat oven to 350F. Beat together butter and sugars until creamy.
Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well.
Drop by rounded Tablespoons onto ungreased cookie sheet.
Bake for 10 to 12 minutes or until golden brown. Cool for one minute on cookie sheet. Remove to wire rack.
Glaze: Mix together confectioner's sugar with a small amount of water until the mixture drips slowly off a spoon. Glaze in a back-and-forth motion over cookies. Allow glaze to dry completely before stacking cookies. Makes about 4 dozen (2”) cookies.
To make as bar cookies: Bake 30-35 minutes in an ungreased 13x9" metal baking pan.
