MMMmonday - Baked Parmesan Tomatoes

One of the things that I've come to love about living in South Carolina is that I get two growing seasons for my tomatoes!  After a bumper crop in spring, we let some of our tomatoes go to seed and now we're starting to enjoy the 'fruits' of our labors all over again....



I think this next recipe, that I found on Eatingwell.com, is a great way to enjoy tomatoes through the fall!


Baked Parmesan Tomatoes


INGREDIENTS
4 tomatoes, halved horizontally
1/4 cup freshly grated Parmesan cheese
1 teaspoon chopped fresh oregano
1/4 teaspoon salt
Freshly ground pepper, to taste
4 teaspoons extra-virgin olive oil


Preheat oven to 450° F.
Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.
